Tagliatelle pasta and zucchini

What I like when I’m cooking pasta is to transform a simple ingredient into a delicious main and that is what I propose to you with these Tagliatelle pasta and zucchini. There are so many kind of pasta, possible seasonings, that the recipes are endless!

With a brother-in-law Italian, I have been initiated to the good pasta and I managed (well I think?) to convince him with a few recipes. In this recipe, which I found inspiration into a cooking magazine, the courgette is transformed into both tagliatelle and pesto, and added to this a little piece of crunchy ham: such a treat!

Recipe for 4 people
Difficulty: Easy
Preparation Time: 10 minutes
Cooking Time: 10 min

Ingredients :

  • 400g of fresh eggs Tagliatelle pasta
  • 3 zucchinis
  • 4 slices of smoked ham
  • 4 tablespoons of pine nuts
  • 4 tablespoons of grated Parmesan cheese
  • A few leaves of basil and mint
  • 1 clove of garlic
  • Olive oil
  • Salt and pepper

Steps :

  1. Preheat your oven to 180° to prepare the crispy smoked ham
  2. Prepare first of all the pesto of courgettes: mix 1 zucchini with basil, garlic, 2 teaspoons of pine nuts, 2 spoons of parmesan and add a net of olive oil and then a pinch of salt
  3. Use your peeler to cut the 2 other courgettes into thin strips (to look like tagliatelle)
  4. Put the Tagliatelle of courgettes into a frying pan with a net of olive oil and add the rest of the pine nuts
  5. On a cooking plate recovered of baking paper place the slices of ham. Cover with baking paper and on the top of it put a plate (that can go into the oven) to create a pressure. Put in the oven for approximately 5 minutes the time that the ham becomes crispy and then cut it into slices (as per the photos)
  6. Cook your Tagliatelle pasta in a water brought to boil and add a few pinches of salt (keep a ladle of the cooking water). Once your pasta is cooked, add it to the frying pan containing the courgettes, add the ladle of the cooking water and then the pesto and stir in everything on bright fire
  7. Display it all on your plates and then sprinkle with parmesan cheese. Finally add the slices of ham and mint
