J’ai posté récemment la recette de la tarte froide ricotta, basilic, tomates qui a été un grand succès ici et par chez vous aussi (merci pour toutes les photos de vos réalisations que vous m’avez envoyées !). J’ai donc récidivé avec une autre tarte froide à l’aneth, saumon et concombre. Pour la crème à l’aneth, je monte en chantilly de la crème entière avec du fromage frais, il faut donc la laisser prendre quelques heures au réfrigérateur ensuite. Cette recette est très fraiche et parfaite pour les chaudes soirées d’été !

Recette pour 4 personnes
Difficulté : Facile
Temps de préparation : 15 min
Temps de cuisson : 20 min (pour la pâte brisée)

Les Ingrédients :

Pour la pâte brisée (pour 4 personnes)

  • 150g de farine
  • 75g de beurre à température ambiante
  • 2 cc de graines de cumin
  • 2 cc de graines de pavot
  • ½ cc de sel
  • 3 CS d’eau froide

Pour la garniture (la garniture peut servir pour 6 personnes)

  • 200g de fromage frais type St Moret / Philadelphia
  • 15cl de crème liquide entière bien froide
  • Quelques brins d’aneth (ou surgelé)
  • ½ concombre
  • 4 tranches de saumon fumé
  • Quelques baies roses
  • ½ citron
  • Du poivre du moulin

Les étapes :

  1. Préchauffez votre four sur 180° et déposez votre bol dans lequel vous monterez la chantilly au frais.
  2. Préparez votre pâte brisée en déposant dans la cuve de votre robot tous les ingrédients. Pétrissez à vitesse rapide jusqu’à ce que l’ensemble forme une boule. Etalez la pâte obtenue avec un rouleau sur votre plan de travail légèrement fariné, puis foncez-la dans votre moule à tarte (j’ai utilisé un cercle de 20 cm de diamètre). Piquez la pâte à la fourchette, recouvrez de papier sulfurisé et de poids cuisson. Enfournez pour 20 min environ jusqu’à ce que la pâte soit croustillante.
  3. Pendant la cuisson, réalisez votre crème chantilly. Fouettez le fromage frais pendant 1 min environ puis ajoutez votre crème liquide bien froide et faites monter au fouet électrique pendant 5 minutes environ. Jusqu’à ce qu’elle soit bien lisse. Ajoutez quelques brins d’aneth puis remuez le tout.
  4. Lorsque la pâte est cuite, laissez-la refroidir puis étalez la crème chantilly par-dessus.
  5. Placez au frigo 3h minimum.
  6. Au moment de servir, disposez vos tranches de saumon fumé, votre concombre coupé en fines lamelles, quelques gouttes de jus de citron et recouvrez de baies roses, d’aneth et faites quelques tours de poivre du moulin. Dégustez bien frais.

And guess what… I did it again! But this time with another flavor: dill, salmon and cucumber. For the dill cream, I whip some whipping (or double) cream with cream cheese, so you have to let it in the fridge for a few hours before serving. This recipe is very fresh and perfect for hot summer evenings!

Recipe for 4 people
Difficulty: Easy
Preparation time: 15 min
Cooking time: 20 min (for the shortcrust dough)

Ingredients :

For the shorcrust dough (for 4 people)

  • 150g flour
  • 75g butter at room temperature
  • 2 tsp cumin seeds
  • 2 tsp poppy seeds
  • ½ tsp salt
  • 3 tbsp cold water

For the filling (the filling can be used for 6 people)

  • 200g cream cheese
  • 15cl whipping or double cream very cold
  • A few sprigs of dill (or frozen)
  • ½ cucumber
  • 4 slices smoked salmon
  • Some pink berries
  • ½ lemon
  • Pepper from the mill

Steps:

  1. Preheat your oven to 180 ° and place the bowl in which you will make your whipped cream into the freezer.
  2. Prepare your shortcrust dough by placing all the ingredients in your robot. Knead at high speed until the set forms a ball. Spread the dough obtained with a roller on your lightly floured worktop, then place it into your pie pan (I used a circle of 20 cm in diameter). Make small holes in the dough with a fork, cover with parchment paper and baking weights. Bake for about 20 minutes until the dough is crispy.
  3. When cooking, prepare your whipped cream. Whisk the cream cheese for about 1 min and then add your cold cream and whisk for about 5 minutes. Until it is smooth. Add a few sprigs of dill.
  4. When the dough is cooked, let it cool and then spread the whipped cream over it.
  5. Place in the fridge for 3h minimum.
  6. When ready to serve, display your smoked salmon slices, cucumber cut into thin slices, a few drops of lemon juice and cover with pink berries, dill and some pepper from the mill. Enjoy cold.
