Ce gâteau aux pommes caramélisées est en fait un quatre quart recouvert de pommes caramélisées (avec les bords bien croquants de caramel !). Pour le rendre encore plus gourmand ou avec un goût de pomme plus prononcé, vous pouvez ajouter une pomme ou deux coupées en dés dans la pâte. Il se garde bien plusieurs jours et il est parfait pour un petit déjeuner.

Recette pour 8 personnes
Difficulté : Facile (la réalisation du caramel peut être un peu périlleuse)
Temps de préparation : 20 min
Temps de cuisson : 35 min

Les Ingrédients :

  • 2 grosses pommes
  • 3 œufs
  • 350g de sucre (dont 200g pour le caramel)
  • 150g de farine
  • 150g de beurre
  • 1 sachet de levure
  • 1 sachet de sucre vanillé

Les étapes :

Le gâteau

  1. Commencez par préparer la pâte du gâteau. Pour cela battez dans le bol d’un robot (ou avec un fouet) les œufs et 150g de sucre, jusqu’à ce que le mélange blanchisse. Ajoutez la farine et mélangez bien, ajoutez le beurre fondu. Mélangez à nouveau. Enfin, intégrez à la préparation la levure et le sucre vanillé. Mélangez une dernière fois, le mélange doit être homogène.
  2. Pelez vos pommes et coupez-les en quartiers d’environ 1cm de large.
  3. Préchauffez votre four sur 180° et y mettre le moule à manquer (vide) légèrement beurré 5 minutes après. Cette technique permet d’éviter que le caramel ne durcisse dès qu’on le versera dans le moule (cf étape 5).

Le caramel

  1. Préparez le caramel. Mettre les 200g de sucre restant dans une casserole et laissez fondre à feu doux. Une fois que le sucre se colore et commence à fondre, remuez avec une cuillère en bois jusqu’à ce que le mélange soit bien liquide (attention à ne pas brûler le caramel, ça va vite !). Mon conseil : une fois que le caramel devient liquide mais avant que tout le sucre ne soit fondu, remuez le mélange hors du feu pour éviter de brûler le caramel (vous pouvez toujours remettre la casserole sur le feu si le sucre ne se dissout pas totalement).

Finalisation du gâteau

  1. Sortez le moule du four et versez-y immédiatement le caramel (afin qu’il ne durcisse pas) de façon uniforme. Disposez les tranches de pommes sur le caramel en cercle (comme sur les photos) puis versez la préparation du gâteau par dessus.
  2. Mettre au four pendant 35 minutes et une fois la cuisson terminée, démoulez le gâteau immédiatement.

This cake with caramelised apples is in fact a kind of pound cake covered with caramelised apples (with the edges full of crunchy caramel!). To make it even more greedy or more apple tasty, simply add an apple or two cut in dice in the dough. The cake can be kept for a few days and is just perfect for breakfast.

Ingredients :

  • 2 large apples
  • 3 eggs
  • 350g sugar (including 200g for the caramel)
  • 150g flour
  • 150g butter
  • Baking powder (approx. 11g)
  • A bit of vanilla sugar (approx. 15g)

Steps :

The Cake 

  1. Start to prepare the dough for the cake. For this beat in the bowl of a cooking robot (or with a whip) eggs and 150g of sugar until the mixture whitens. Add the flour and mix well, add the melted butter. Mix again. Finally, integrate in the preparation the baking powder and vanilla sugar. Mix one more time, the mixture must be uniform.
  2. Peel your apples and cut them in quarters of approximately 1cm thick.
  3. Preheat your oven to 180° and put the baking mould in it after 5 minutes (with a bit of butter inside).

The caramel

  1. Prepare the caramel. Put the 200g of sugar remaining in a saucepan and let it melt on soft fire. Once the sugar is coloured and begins to melt, stir with a wooden spoon until the mixture is well liquid (attention not to burn the caramel, it goes quickly!). My tip: Once the caramel becomes liquid but before that all of the sugar is melted, stir the mixture out of the fire to avoid burning the caramel (you can always reset the pan on the fire if the sugar does not dissolve completely).

Ending the cake

  1. Remove the baking mold from the oven and pour immediately the caramel into it (so that it does not harden). Display the sliced apples into a Circle (like on the pictures) and pour the cake preparation onto it.
  2. Finally put in the oven for 35 minutes and once the baking process is finished, unmold the cake immediately.
